Pan-Seared West Country Outdoor Reared Loin Pork Chops with Apple Cider Sauce

Your West Country Outdoor Reared Loin Pork Chops are a tender and flavorful cut that pairs beautifully with a tangy apple cider sauce. This simple recipe brings out the natural richness of the pork while adding a touch of sweetness and depth.


Ingredients

For the Pork Chops:

  • 4 West Country Outdoor Reared Loin Pork Chops
  • 1 tbsp olive oil
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • Salt and freshly ground black pepper

For the Apple Cider Sauce:

  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 150ml dry apple cider
  • 100ml chicken stock
  • 1 tsp Dijon mustard
  • 1 tbsp double cream (optional, for a richer sauce)
  • 1 apple, cored and thinly sliced (optional garnish)

Method

1. Prepare the Pork Chops

  1. Pat the pork chops dry with paper towels and season generously with salt, pepper, and thyme.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the pork chops for 4–5 minutes per side, depending on thickness, until golden brown and cooked through. Use a meat thermometer for precision; the internal temperature should reach 63°C.
  4. Remove the chops from the pan and let them rest on a plate, loosely covered with foil.

2. Make the Apple Cider Sauce

  1. Reduce the heat to medium and melt the butter in the same skillet.
  2. Add the chopped onion and cook for 5 minutes until softened.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Pour in the apple cider, scraping the bottom of the pan to deglaze and lift any browned bits.
  5. Add the chicken stock and simmer for 5–7 minutes until the liquid is reduced by half.
  6. Stir in the Dijon mustard and cream (if using) for a smooth, flavorful sauce.

3. Optional Apple Garnish

  1. In a small pan, sauté the sliced apple in a little butter until lightly caramelized. Set aside for garnish.

4. Serve

  • Spoon the apple cider sauce over the rested pork chops.
  • Garnish with the sautéed apple slices, if desired.
  • Pair with creamy mashed potatoes, roasted vegetables, or a crisp green salad.

Frozen Product

Any frozen product you receive from us will have a frozen use by date on it. 

When defrosting we recommend taking the product out of the freezer and defrosting gradually in you fridge. Depending on the size of the product you should take it out 2-3 days prior to use and use it within 2 days
