Classic Shepherd’s Pie Recipe Using West Country Free-Range Lamb Mince

This hearty shepherd’s pie is a comforting family favorite, made even better with your West Country free-range lamb mince. With rich, savory lamb and a creamy mashed potato topping, it’s the perfect meal for cozy evenings.


Ingredients

For the Filling:

  • 500g West Country free-range lamb mince
  • 1 large onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tbsp plain flour
  • 250ml lamb or beef stock
  • 100ml red wine (optional, or replace with more stock)
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme or 1 sprig fresh thyme
  • 1 tsp dried rosemary or 1 sprig fresh rosemary
  • Salt and freshly ground black pepper
  • 100g frozen peas (optional)

For the Potato Topping:

  • 1kg potatoes, peeled and chopped
  • 50g butter
  • 75ml milk (or cream for extra richness)
  • 50g grated mature cheddar (optional)
  • Salt and freshly ground black pepper

Method

1. Make the Filling

  1. Heat a large frying pan or casserole dish over medium heat. Add the lamb mince and cook until browned, breaking it up with a spoon. Drain off any excess fat if needed.
  2. Add the onion, carrots, celery, and garlic to the pan. Cook for 5–7 minutes, stirring occasionally, until softened.
  3. Stir in the tomato paste and cook for 1–2 minutes.
  4. Sprinkle over the flour, mix well, and cook for 1 minute.
  5. Gradually add the stock and wine (if using), stirring constantly to create a smooth sauce.
  6. Add the Worcestershire sauce, thyme, rosemary, and season with salt and pepper. Simmer gently for 20–25 minutes, until the sauce has thickened. Stir in the peas for the last 5 minutes of cooking if using.

2. Prepare the Potato Topping

  1. While the filling simmers, boil the potatoes in salted water for 15–20 minutes, or until tender.
  2. Drain the potatoes and mash with the butter and milk. Season with salt and pepper, and stir in the grated cheddar if using.

3. Assemble the Shepherd’s Pie

  1. Preheat your oven to 200°C (180°C fan).
  2. Spoon the lamb filling into a deep baking dish and spread it out evenly.
  3. Top with the mashed potatoes, spreading them over the filling and roughing up the surface with a fork for a crispy topping.

4. Bake

  1. Place the dish on a baking tray to catch any drips.
  2. Bake for 25–30 minutes, or until the top is golden and the filling is bubbling.

5. Serve

  • Allow the shepherd’s pie to rest for 5 minutes before serving.
  • Pair with steamed greens, such as broccoli or cabbage, for a complete meal.

Frozen Product

Any frozen product you receive from us will have a frozen use by date on it. 

When defrosting we recommend taking the product out of the freezer and defrosting gradually in you fridge. Depending on the size of the product you should take it out 2-3 days prior to use and use it within 2 days
