Juicy Lemon Herb Boneless Skinless Chicken Breasts

Boneless, skinless chicken breasts are lean and versatile, but they can dry out if not cooked properly. This recipe uses a flavorful lemon herb marinade and searing technique to ensure juicy, tender chicken every time.

Ingredients

  • 4 boneless, skinless chicken breasts (approx. 150g each)
  • 2 tbsp olive oil (plus more for cooking)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme (or 1 tbsp fresh thyme leaves)
  • Salt and freshly ground black pepper

Method

1. Marinate the Chicken

  1. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
  2. Place the chicken breasts in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is evenly coated.
  3. Marinate for at least 30 minutes (or up to 4 hours in the fridge).

2. Prepare to Cook

  1. Remove the chicken from the marinade and pat it dry with paper towels to promote browning.
  2. Preheat a large skillet or grill pan over medium-high heat and add a drizzle of olive oil.

3. Cook the Chicken

  1. Place the chicken breasts in the hot skillet. Sear for 4–5 minutes per side, depending on thickness, until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 74°C.
  2. If the chicken is browning too quickly before fully cooking, reduce the heat to medium and cover the pan with a lid for the last few minutes.

4. Rest and Serve

  1. Remove the chicken from the skillet and let it rest for 5 minutes on a plate. This step allows the juices to redistribute for moist, tender meat.
  2. Slice or serve whole with your choice of sides.

Serving Suggestions

  • Pair with steamed vegetables, mashed potatoes, or a crisp green salad.
  • For a low-carb option, serve with cauliflower rice or roasted vegetables.

Chef’s Tips

  • Even Cooking: Pound the chicken breasts to an even thickness before marinating for consistent cooking.
  • Alternative Cooking Methods: You can also bake the marinated chicken in a preheated oven at 200°C (180°C fan) for 20–25 minutes or grill it for a smoky flavor.

This simple recipe guarantees flavorful and juicy boneless, skinless chicken breasts, perfect for a quick and healthy meal. Enjoy!
