Classic Pork Meatballs with Tomato Sauce Recipe

Your lean outdoor-reared minced pork is perfect for creating tender and flavorful meatballs. This simple recipe pairs the meatballs with a rich tomato sauce for a versatile dish that can be served with pasta, rice, or crusty bread.

Ingredients

For the Meatballs:

  • 500g lean outdoor-reared minced pork
  • 1 small onion, finely grated
  • 1 garlic clove, minced
  • 2 tbsp breadcrumbs
  • 1 tbsp fresh parsley, finely chopped (or 1 tsp dried parsley)
  • 1 tsp dried oregano
  • 1 egg, lightly beaten
  • Salt and freshly ground black pepper
  • 1 tbsp olive oil (for frying)

For the Tomato Sauce:

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 400g tin of chopped tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried basil or oregano
  • 1 tsp sugar (optional, to balance acidity)
  • Salt and freshly ground black pepper

Method

1. Prepare the Meatballs

  1. In a large bowl, combine the minced pork, grated onion, garlic, breadcrumbs, parsley, oregano, egg, salt, and pepper.
  2. Mix gently with your hands until just combined. Avoid overmixing to keep the meatballs tender.
  3. Roll the mixture into small balls (about the size of a golf ball) and set aside.

2. Cook the Meatballs

  1. Heat the olive oil in a large frying pan over medium heat.
  2. Brown the meatballs in batches for 2–3 minutes on each side until golden. They don’t need to be cooked through at this stage. Remove from the pan and set aside.

3. Make the Tomato Sauce

  1. In the same pan, heat 1 tbsp of olive oil over medium heat.
  2. Add the chopped onion and sauté for 5–7 minutes until softened.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Add the chopped tomatoes, tomato paste, basil or oregano, and sugar if using. Season with salt and pepper.
  5. Simmer gently for 10–15 minutes, stirring occasionally.

4. Combine Meatballs and Sauce

  1. Return the meatballs to the pan, nestling them into the sauce.
  2. Cover and simmer on low heat for 15–20 minutes, or until the meatballs are cooked through and the sauce has thickened.

5. Serve

  • Serve the meatballs and sauce over cooked spaghetti, rice, or mashed potatoes.
  • Garnish with freshly grated Parmesan and chopped parsley, if desired.

Chef’s Tips

  • For a Mediterranean twist, add a pinch of smoked paprika or chili flakes to the meatballs or sauce.
  • Make ahead: The meatballs and sauce can be prepared a day in advance and reheated gently on the stovetop.

This recipe makes the most of your lean outdoor-reared minced pork, creating tender, flavorful meatballs that are sure to be a hit with family and friends. Enjoy!
