Hearty Lamb Curry Recipe Using Lean Diced Lamb

This rich and aromatic lamb curry highlights the tenderness and flavor of your lean diced lamb. Perfect for a cozy meal, this recipe is simple to prepare and packed with spices for a truly satisfying dish.


Ingredients

For the Curry:

  • 500g lean diced lamb
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1 thumb-sized piece of ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1–2 tsp chili powder (adjust to taste)
  • 400g tin of chopped tomatoes
  • 200ml lamb or chicken stock
  • 100ml plain yogurt (or coconut milk for creaminess)
  • Salt and freshly ground black pepper

Optional Additions:

  • 1 large potato, diced
  • 1 handful of fresh spinach or coriander for garnish

Method

1. Prepare the Lamb

  1. Season the diced lamb with a pinch of salt and pepper.
  2. Heat 1 tbsp of the oil in a large pan over medium-high heat. Sear the lamb in batches until browned on all sides. Remove and set aside.

2. Cook the Aromatics

  1. Reduce the heat to medium and add the remaining oil to the pan.
  2. Sauté the onion for 5–7 minutes until golden and softened.
  3. Add the garlic and ginger, cooking for 1–2 minutes until fragrant.

3. Toast the Spices

  1. Stir in the cumin, coriander, turmeric, paprika, and chili powder. Cook for 1 minute, stirring, to release their flavors.

4. Build the Curry

  1. Add the chopped tomatoes and stock to the pan, scraping up any browned bits from the bottom.
  2. Return the lamb to the pan, stirring to coat it in the sauce.
  3. If using, add the diced potato. Bring the mixture to a simmer.

5. Simmer

  1. Cover and cook on low heat for 1.5–2 hours, stirring occasionally. The lamb should be tender, and the sauce thickened. Add a splash of water if the sauce reduces too much.

6. Finish the Curry

  1. Stir in the yogurt or coconut milk for creaminess. Simmer for 5 more minutes to combine.
  2. Taste and adjust the seasoning with salt and pepper as needed.

7. Serve

  • Serve the curry hot with steamed basmati rice, naan bread, or chapati.
  • Garnish with fresh spinach or chopped coriander for a burst of color and freshness.

  • For added depth, toss the lamb in 1 tsp garam masala or curry powder before searing.
  • This curry is even better the next day as the flavors develop overnight.

Fresh products are labelled with a fresh use by. When we complete your order it is cut fresh 1 day prior to delivery. If you wish to freeze the product you can be assured you can do so. You should do so immediately you receive it.

We recommend that you label what you freeze with the following MAXIMUM suggested BEST BEFORE DATES:

Frozen Product

Any frozen product you receive from us will have a frozen use by date on it. 

When defrosting we recommend taking the product out of the freezer and defrosting gradually in you fridge. Depending on the size of the product you should take it out 2-3 days prior to use and use it within 2 days
