Herbed West Country Lamb Leg Steaks with Garlic Butter Vegetables

Our lean and flavorful West Country lamb leg steaks are perfect for a quick, delicious meal that highlights the natural quality of the meat. This recipe pairs the steaks with herbed seasoning and buttery garlic vegetables for a wholesome, satisfying dish.


Ingredients (serves 2):

For the lamb steaks:

  • 2 West Country lamb leg steaks
  • 1 tbsp olive oil
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme, finely chopped
  • 2 garlic cloves, minced
  • Salt and freshly ground black pepper to taste

For the garlic butter vegetables:

  • 200g green beans, trimmed
  • 150g baby carrots, peeled
  • 2 tbsp unsalted butter
  • 2 garlic cloves, finely minced
  • Juice of half a lemon
  • Salt and pepper to taste

Method:

  1. Prepare the Lamb Steaks
    • In a small bowl, mix the olive oil, rosemary, thyme, garlic, salt, and pepper.
    • Rub this herb mixture over the lamb steaks, ensuring they’re evenly coated. Set aside to marinate for 15-20 minutes while you prepare the vegetables.
  2. Cook the Vegetables
    • Bring a pot of salted water to a boil and blanch the green beans and baby carrots for 3-4 minutes until just tender. Drain and set aside.
    • In a large frying pan, melt the butter over medium heat. Add the garlic and sauté for 1 minute until fragrant.
    • Toss the green beans and carrots in the garlic butter. Squeeze over the lemon juice, season with salt and pepper, and keep warm.
  3. Cook the Lamb Steaks
    • Heat a griddle pan or frying pan over medium-high heat. Add the lamb steaks and cook for 3-4 minutes on each side for medium-rare, or longer if you prefer them well-done. Remove from the pan and let them rest for 5 minutes.
  4. Serve and Enjoy
    • Plate the lamb steaks alongside the garlic butter vegetables. Optionally, garnish with extra rosemary or thyme for presentation.

Fresh products are labelled with a fresh use by. When we complete your order it is cut fresh 1 day prior to delivery. If you wish to freeze the product you can be assured you can do so. You should do so immediately you receive it.

Frozen Product

Any frozen product you receive from us will have a frozen use by date on it. 

When defrosting we recommend taking the product out of the freezer and defrosting gradually in you fridge. Depending on the size of the product you should take it out 2-3 days prior to use and use it within 2 days
