Herb-Crusted French-Trimmed Lamb Cutlets Recipe

French-trimmed lamb cutlets are a luxurious and tender cut, perfect for quick cooking. This recipe pairs them with a flavorful herb crust for a dish that’s elegant, juicy, and packed with flavor.


Ingredients

For the Lamb:

  • 8 French-trimmed lamb cutlets
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper

For the Herb Crust:

  • 75g fresh breadcrumbs
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary, finely chopped
  • 1 garlic clove, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil

Method

1. Prepare the Herb Crust

  1. In a bowl, combine the breadcrumbs, parsley, thyme, rosemary, and garlic.
  2. Stir in the olive oil until the mixture is slightly damp and holds together.
  3. Season with a pinch of salt and pepper. Set aside.

2. Prepare the Lamb Cutlets

  1. Preheat your oven to 200°C (180°C fan).
  2. Rub the lamb cutlets with olive oil and season generously with salt and pepper.

3. Sear the Lamb

  1. Heat a large frying pan over medium-high heat.
  2. Sear the lamb cutlets for 1–2 minutes on each side until golden brown. Remove from the pan and let them cool slightly.

4. Apply the Herb Crust

  1. Spread a thin layer of Dijon mustard over the top of each cutlet.
  2. Press the herb breadcrumb mixture onto the mustard-coated side, ensuring an even layer.

5. Cook the Lamb

  1. Transfer the cutlets to a baking tray, crust-side up.
  2. Roast in the preheated oven for 6–8 minutes for medium-rare, or adjust the time to your preferred doneness.

6. Serve

  • Remove the lamb cutlets from the oven and let them rest for 5 minutes before serving.
  • Pair with creamy mashed potatoes, roasted vegetables, or a fresh green salad for a balanced meal.

  • For added flavor, add a teaspoon of grated Parmesan to the breadcrumb mixture.

Fresh products are labelled with a fresh use by. When we complete your order it is cut fresh 1 day prior to delivery. If you wish to freeze the product you can be assured you can do so. You should do so immediately you receive it.

We recommend that you label what you freeze with the following MAXIMUM suggested BEST BEFORE DATES:

Frozen Product

Any frozen product you receive from us will have a frozen use by date on it. 

When defrosting we recommend taking the product out of the freezer and defrosting gradually in you fridge. Depending on the size of the product you should take it out 2-3 days prior to use and use it within 2 days
