Cooking a Boneless Turkey Crown

Cooking a boneless turkey crown is a great option for a tender and juicy roast that’s perfect for smaller gatherings or if you prefer white meat. Here’s a straightforward guide to cooking your turkey crown to perfection, including cooking times per kilogram.

Preparation:

  1. Preheat Your Oven: Set your oven to 180°C (fan) or 200°C (conventional).
  2. Season the Turkey: Rub the turkey crown with olive oil or melted butter. Season generously with salt, pepper, and any herbs or spices you like (thyme, rosemary, or sage work wonderfully).
  3. Optional Extras: Place slices of bacon on top or insert herbs under the skin for extra flavor.

Cooking Times:

The general rule for roasting a boneless turkey crown is 30-35 minutes per kilogram plus an additional 20 minutes. Always check that the internal temperature reaches 74°C for safety.

Cooking Method:

  1. Place the turkey crown in a roasting tin, skin side up. If you’ve added bacon, ensure it fully covers the crown.
  2. Add a splash of water, stock, or wine to the tin to keep the meat moist and create a base for a flavorful gravy.
  3. Cover loosely with foil for the first half of the cooking time to prevent the skin from burning.
  4. Remove the foil for the last 20-30 minutes to allow the skin to crisp up.
  5. Use a meat thermometer to check the thickest part of the turkey. Once it reads 74°C, it’s ready.

Resting:

Once cooked, remove the turkey crown from the oven and rest it for at least 20 minutes, loosely covered with foil. This allows the juices to redistribute, making the meat even more tender and flavorful.

Tips:

  • If you want extra-crispy skin, pat the turkey dry with kitchen paper before seasoning.
  • Keep basting the turkey crown with the juices in the roasting tin every 20-30 minutes for added moisture and flavor.
  • Save the pan drippings for a delicious gravy.

Enjoy your perfectly roasted turkey crown! It’s a simple yet impressive centerpiece for any meal.
