the butchr. Mild Chicken Curry

Ingredients:

  • 500g boneless chicken, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon paprika
  • 1 cup coconut milk
  • 1 cup chicken broth
  • Salt, to taste

Instructions:

  1. In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  2. Add the minced garlic and grated ginger to the pan. Stir and cook for another minute.
  3. Next, add the turmeric powder, cumin powder, coriander powder, and paprika to the pan. Stir well to coat the onions, garlic, and ginger with the spices.
  4. Add the chicken pieces to the pan and cook until they are lightly browned on all sides.
  5. Pour in the coconut milk and chicken broth. Stir to combine all the ingredients.
  6. Reduce the heat to low, cover the pan, and let the curry simmer for about 20-25 minutes, or until the chicken is cooked through.
  7. Taste the curry and season with salt according to your preference.
  8. Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
