The bone-in preparation also enhances flavour, creating a richer, more indulgent eating experience.

Crispy Roasted Chicken Thighs with Garlic and Herbs

Chicken thighs are juicy, flavorful, and versatile. This simple recipe uses a high-heat roasting technique to create crispy skin and tender meat, enhanced with garlic and herbs for a comforting, crowd-pleasing dish.

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp dried thyme (or 1 tbsp fresh thyme leaves)
  • 1 tsp dried rosemary (or 1 tbsp fresh rosemary, chopped)
  • Salt and freshly ground black pepper
  • Juice of ½ lemon (optional, for brightness)

Method

1. Prepare the Chicken

  1. Preheat your oven to 220°C (200°C fan).
  2. Pat the chicken thighs dry with paper towels to ensure crispy skin.
  3. In a small bowl, mix the olive oil, garlic, paprika, thyme, rosemary, salt, and pepper.

2. Season the Chicken

  1. Rub the oil and herb mixture all over the chicken thighs, ensuring even coverage.
  2. Place the thighs on a baking tray or in an ovenproof skillet, skin-side up.

3. Roast the Chicken

  1. Roast in the preheated oven for 35–40 minutes, or until the skin is golden and crispy and the internal temperature reaches 74°C.
  2. For extra-crispy skin, finish under the grill for 2–3 minutes, keeping a close eye to avoid burning.

4. Optional Lemon Finish

  1. Squeeze lemon juice over the chicken just before serving for a fresh, zesty flavor.

5. Serve

  • Serve the chicken thighs hot with roasted vegetables, mashed potatoes, or a crisp green salad.
  • Drizzle with the pan juices for added flavor.

Chef’s Tips

  • For an even crispier result, place the chicken on a wire rack set over the baking tray to allow air to circulate around the thighs.
  • Add root vegetables like carrots or potatoes to the tray to roast alongside the chicken for a complete meal.

This recipe highlights the juicy, tender meat and crispy skin of chicken thighs, enhanced with simple herbs and garlic for a classic and satisfying dish. Enjoy!
