How to Make and Cook Beef Smash Burgers

Smash burgers are all about creating a thin, crispy patty with juicy, flavorful beef. Using high-quality beef mince ensures the best results. This recipe walks you through making and cooking the ultimate beef smash burger.

Ingredients

For the Patties:

  • 500g high-quality beef mince (80/20 fat ratio for juiciness)
  • Salt and freshly ground black pepper

For Assembly:

  • 4 burger buns
  • 4 slices of cheese (American, cheddar, or your choice)
  • Lettuce, sliced tomato, and pickles (optional toppings)
  • Burger sauce, ketchup, or mayonnaise

Method

1. Prepare the Beef

  1. Divide the beef mince into 4 equal portions (about 125g each) and loosely shape into balls. Do not compact the meat; keeping it loose allows for better texture and browning.

2. Heat the Cooking Surface

  1. Preheat a heavy cast-iron skillet, griddle, or flat-top grill over medium-high heat until very hot. A properly heated surface is crucial for achieving the signature crust.

3. Smash the Burgers

  1. Place a ball of beef onto the hot surface and immediately smash it flat using a spatula or a burger press. Use a piece of parchment paper between the spatula and beef to prevent sticking. The patty should be thin, about 1cm thick.
  2. Season generously with salt and pepper.

4. Cook the Patties

  1. Cook the smashed patty for 2–3 minutes on the first side, without moving it, to develop a crispy crust.
  2. Flip the patty and immediately place a slice of cheese on top to melt. Cook for another 1–2 minutes.

5. Toast the Buns

  1. While the patties cook, toast the burger buns cut-side down on the same skillet or grill until golden brown.

6. Assemble the Burgers

  1. Spread your favorite sauce on the bottom bun.
  2. Add lettuce, tomato, or pickles if desired.
  3. Place the cheesy patty on top, then finish with the top bun.

Chef’s Tips

  • Avoid Overmixing: Do not overwork the beef mince when shaping the patties; this ensures tender burgers.
  • Use High Heat: A hot surface is essential for creating the crispy crust that defines smash burgers.
  • Double Stack: For a classic smash burger experience, stack two patties on each bun.

Serving Suggestions

  • Serve with crispy fries or onion rings for a complete meal.
  • Add caramelized onions or crispy bacon for extra indulgence.

This recipe delivers crispy, juicy beef smash burgers with minimal effort and maximum flavor, making them a hit for any casual meal or barbecue. Enjoy!
