Pan-Seared Loin Lamb Chops with Rosemary and Garlic

Loin lamb chops are tender, juicy, and full of flavor. This simple recipe uses fresh herbs and garlic to complement the natural richness of the lamb, making it a quick and delicious dish for any occasion.

Ingredients

For the Lamb Chops:

  • 4 loin lamb chops
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme, finely chopped
  • Salt and freshly ground black pepper

For Serving:

  • Lemon wedges
  • Fresh parsley for garnish (optional)

Method

1. Season the Lamb Chops

  1. Pat the lamb chops dry with paper towels to ensure a good sear.
  2. Rub the chops with olive oil, then season generously with salt, pepper, rosemary, thyme, and minced garlic.
  3. Let the chops sit at room temperature for 15–20 minutes to allow the flavors to develop.

2. Sear the Lamb Chops

  1. Heat a large frying pan or skillet over medium-high heat until hot.
  2. Add a drizzle of olive oil to the pan, swirling to coat.
  3. Place the lamb chops in the pan and sear for 2–3 minutes per side, depending on thickness, until golden brown.
  4. For thicker chops, lower the heat slightly and cook for an additional 1–2 minutes per side for medium-rare. Use a meat thermometer for precision:
    • Medium-Rare: 57–60°C
    • Medium: 63–68°C

3. Rest the Chops

  1. Remove the chops from the pan and let them rest on a plate for 5 minutes. This step ensures juicy, tender meat.

4. Serve

  1. Transfer the lamb chops to serving plates and garnish with a sprinkle of fresh parsley, if desired.
  2. Serve with lemon wedges for a fresh, zesty finish.

Serving Suggestions

  • Pair the chops with creamy mashed potatoes, roasted vegetables, or a light green salad.
  • For a Mediterranean twist, serve with couscous, grilled vegetables, and a dollop of tzatziki.

Chef’s Tips

  • For an extra layer of flavor, add a knob of butter to the pan during the last minute of cooking and baste the chops with the melted butter.
  • Avoid overcrowding the pan—cook in batches if necessary to ensure a proper sear.

This quick and flavorful recipe lets the natural tenderness of your loin lamb chops shine. Perfect for a weeknight meal or a special occasion! Enjoy!
