What is SOUSBBQ?

Creating traditional low and slow BBQ meats takes time and a significant amount of effort. BBQ Purists love nothing more than spending the hours required creating succulent briskets, pastrami, and pulled pork etc.

Not everybody has got the time or indeed the facilities to create low and slow BBQ foods. We wanted to give people the opportunity to enjoy pitmaster quality meats with very little effort.

By using a combination of smoking and sous-vide cooking techniques we came up with our SOUSBBQ range. With the minimum of effort you can serve up authentic pitmaster BBQ meats in less than 2 hours, in some cases in less than an hour. We even provide all the rubs and sauces and you can even download cooking instructions.

    Inspired by Katz Deli in New York our Authentic Pastrami is taken from Grass-Fed British Briskets.

    We dry cure the briskets for ten days before smoking them and then placing them in a water bath to sous-vide for 22 hours

    All you need to do is place them in a smoker or even the oven and within 2 hours you will have lovely juicy succulent pastrami to serve.

    When choosing your size, please be aware that we lose 30% of the original weight in the pre-cooking phase, so each joint goes a long way.

    Our Kansas Style Briskets are taken from Grass-Fed British Beef.

    We lightly smoke them for 4 hours and then place them in a water bath to sous-vide for 22 hours

    All you need to do is place them in a smoker or even the oven and within 2 hours you will have lovely juicy succulent Kansas Style brisket to serve.

    Our SOUSBBQ Meaty Pork Racks are super meaty, and are cut by our butchers with a good centimetre of meat across the back of the rack. 2 bones is a sizeable portion.

    We smoke the racks for 3 hours before cooking in the water bathe for 16 hours.

    To finish them takes no more than an hour in the smoker, barbecue or even the oven.

    Our SOUSBBQ Pulled Pork is taken from the pork collar, the most succulent of all the pork cuts and the best for pulling.

    We smoke the collar for 4 hours before placing it in the water bath for 20 hours.

    Finish on the smoker, barbecue or oven for 2 hours for literally falling apart pulled pork, still lovely and moist and just mix in the included sweet & spicey apple BBQ sauce.
