Grilled Double Barnsley Lamb Chops with Garlic Herb Butter

Double Barnsley lamb chops are a hearty and flavorful cut, perfect for showcasing the rich taste of high-quality lamb. This recipe keeps it simple, pairing the chops with a garlic herb butter for a truly delicious meal.


Ingredients

For the Lamb Chops:

  • 2 double Barnsley lamb chops
  • 1 tbsp olive oil
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 2 garlic cloves, minced
  • Salt and freshly ground black pepper

For the Garlic Herb Butter:

  • 50g butter, softened
  • 1 garlic clove, minced
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh mint, finely chopped (optional)
  • Zest of 1 lemon
  • Pinch of salt

Method

1. Prepare the Garlic Herb Butter

  1. In a small bowl, mix the softened butter with the garlic, parsley, mint (if using), lemon zest, and a pinch of salt.
  2. Shape the butter into a small log using cling film and refrigerate until firm.

2. Season the Lamb Chops

  1. Rub the lamb chops with olive oil, then sprinkle with rosemary, thyme, minced garlic, salt, and pepper.
  2. Let the chops marinate at room temperature for 15–20 minutes to absorb the flavors.

3. Cook the Lamb Chops

  1. Preheat a grill pan or outdoor grill to medium-high heat.
  2. Place the lamb chops on the grill and cook for 4–5 minutes per side for medium-rare, or longer for your preferred doneness.
  3. Use a meat thermometer for precision:
    • Medium-Rare: 57–60°C
    • Medium: 63–68°C

4. Rest the Chops

  1. Remove the chops from the grill and let them rest for 5 minutes. This allows the juices to redistribute for tender meat.

5. Serve

  1. Top each lamb chop with a slice of the garlic herb butter, letting it melt over the hot meat.

Frozen Product

Any frozen product you receive from us will have a frozen use by date on it. 

When defrosting we recommend taking the product out of the freezer and defrosting gradually in you fridge. Depending on the size of the product you should take it out 2-3 days prior to use and use it within 2 days
