BBQ Cooking Method for Pre-Glazed Pork or Lamb Ribs

Pre-glazed ribs are ready to hit the grill, requiring minimal preparation. The key is to cook them over medium heat to allow the glaze to caramelize without burning, ensuring tender and flavorful ribs.

Ingredients

  • 1–1.5kg pre-glazed pork or lamb ribs

Method

1. Prepare the BBQ

  1. Preheat your barbecue to medium heat (about 180–200°C).
    • For a charcoal grill, ensure the coals are white-hot and arrange them for indirect cooking (place coals to one side).

2. Cook the Ribs

  1. Place the ribs on the cooler side of the grill (indirect heat), ensuring they’re not directly over the flames. This prevents the glaze from burning.
  2. Cover the barbecue with the lid and cook the ribs for 15–20 minutes, turning them occasionally to cook evenly.

3. Caramelize the Glaze

  1. Move the ribs to direct heat for the last 5–7 minutes of cooking, flipping frequently to caramelize the glaze without scorching.
  2. Use tongs to handle the ribs carefully, ensuring the glaze remains intact.

4. Check for Doneness

  • For pork ribs: The internal temperature should reach 74°C.
  • For lamb ribs: Cook until the ribs are tender and slightly charred on the edges.

5. Rest and Serve

  1. Remove the ribs from the grill and let them rest for 5 minutes to allow the juices to redistribute.
  2. Serve hot with your favorite barbecue sides.

Chef’s Tips

  • Avoid Burning: Monitor the ribs closely when cooking over direct heat to prevent the glaze from burning. Adjust the heat as needed.
  • Extra Glaze: If you have extra glaze, brush it on during the last minute of cooking for an even more intense flavor.

Serving Suggestions

  • Pair with sides like creamy coleslaw, potato wedges, or grilled corn on the cob.
  • Add a fresh green salad or pickled vegetables for balance.

This method ensures your pre-glazed ribs are smoky, tender, and perfectly caramelized for a crowd-pleasing BBQ dish. Enjoy!
